Enjoy this light, fresh recipes for lunch as part of our raw food diet plan

Chillin’ cucumber soup recipe
Place 1 small, chopped cucumber and 1⁄2 avocado in a blender, and whizz. Then add 2tbsp fresh mint, 1⁄2 red onion, 2 garlic cloves, juice of 1⁄2 lemon and a pinch of black pepper or your favourite herbs. Blend until smooth. Taste and adjust the seasonings. Pour into individual bowls, slice the other 1⁄2 avocado into the soup. Place in the fridge to chill before serving.

Avocado for Life salad recipe 
Peel and slice 1 firm, ripe avocado, combine with 6 to 10 black olives, 3 diced stalks of celery, 30g Brazil nuts and a small bunch of radishes, sliced. Toss. Clean and separate some Chinese leaves, and use as a bed for the avocado. Top with 2tbsp pomegranate seeds.

Walnut and Apple Salad recipe
Toss together 2 chopped apples, 8 lettuce leaves, 2 sticks of celery, finely sliced, 50g sultanas, 8 walnuts, chopped and ½ bunch red grapes. Dressing: Blend 2tsp raw honey, 4tbsp hemp oil and 40g pine nuts. Pour over the salad.

Alfa To Omega Salad With Cumin Dressing recipe
Toss together in a bowl 1⁄4 iceberg lettuce, finely chopped, 1 grated carrot, 1 finely chopped red onion, 2 sticks celery, finely chopped, 1⁄2 small red bell pepper sliced into hoops, 30g alfalfa sprouts and 150g red cabbage, finely shredded. Dressing: Combine 40ml omega or hemp oil, 1⁄4tsp natural salt, juice of 1 lemon, 1⁄2tsp crushed cumin seeds and 2 crushed garlic cloves in a jar, cover and shake. Dress the salad and mix well. Marinate for 2 hours in the fridge before serving.

Deep Green Salad with Sweet and Sour Dressing recipe
Mix together 30g rocket, 30g coarsely chopped parsley, 4 to 6 chopped curly kale leaves, 50g spinach, hand torn, 1 small carrot, chopped. Add 30 to 40g walnuts and 20 to 30g pistachio nuts, add sweet and sour dressing, mix and serve. Dressing: In a blender, place 1tbsp raw honey, 1tsp Dijon mustard, 1⁄4tsp natural salt, 2tbsp red onion, 50ml olive or hemp oil, 1tbsp apple cider vinegar, 1 garlic clove, crushed and 30ml spring water. Blend until creamy.

Mexican Raw Burritos recipe
To create this yummy filling, mix 1 mashed medium ripe avocado with 1 diced yellow pepper, 1 finely sliced red onion and 3 red jalapeno peppers, seeded and diced. Spoon into about half a head of unbroken red cabbage or lettuce leaves. Squeeze the lime juice over the top and wrap each leaf to create raw burritos!

Fruity salad with tahini dressing recipe

Mix 200 to 300g mixed baby greens with 50g rocket, 2 finely chopped red
onions, 1 diced cucumber and 50g whole blueberries. For the dressing,
blend together 10 to 12 cherry tomatoes, 30g fresh dill or parsley,
3tbsp tahini and 1tbs balsamic vinegar. Pour over and serve

Salad dressing recipes
When you start experimenting with your salads, try one of these clever mixes…
Greek dressing: In a jar, combine olive oil, juice of 1 lemon and a pinch of natural salt to taste. Add crushed garlic or chillies to spice it up a bit. This mix will work with any of your favourite salads.

Orange dressing: Blend 2tbsp tahini, 50ml fresh orange juice, a pinch of natural salt, 1⁄2tsp black pepper and 1⁄4tsp cinnamon. This dressing goes well with a simple green salad of your choice.

Tomato dressing: Blend 3 medium tomatoes, 60g spinach, juice 1 orange, 30g dill and 2tbsp tahini until smooth.
