  • 300g (10oz) good basmati rice, such as Tilda
  • 4 cloves
  • 1 cinnamon stick
  • 1tbsp nigella seeds, toasted


  • Wash the rice well. Put into a lidded sauté pan and add 600ml (1pt) cold water, the cloves and cinnamon with a pinch of salt.

  • Bring to the boil, cover and simmer on a low heat for about 10 minutes. Once the water has evaporated, turn off the heat, leave the lid on and let it steam for a few minutes.

  • Serve sprinkled with the nigella seeds.

Cooked rice is a breeding ground for bacteria, so don’t let it sit in a warm kitchen and ensure it is piping hot before serving.
