    Butternut squash is a versatile vegetable that can roasted, toasted, pureed for soups, mashed or used in casseroles, breads and muffins and it has a comforting flavour to it that evokes autumn.     If you’re a bit short on time then a butternut squash soup is ideal as it can be ready in under 30 minutes. You just need to add the squash to a stock and add seasoning and it’ll be ready in no time.
