If you're looking for something a little bit different for a Sunday lunch or are on the hunt for alternative Christmas recipes then these lovely little chorizo pigs in blankets are perfect. With their smoky, rich flavour and salty hit they compliment all kinds of meat - from chicken and turkey to pork and beef. You'll never buy shop bought pigs in blankets again once you try these tasty little Spanish ones with their big hit of flavour and their impressive colours. If you decide to be generous and share your little chorizo bites with friends and family members they'll be so impressed that you've tried something a little different. You can make these ahead of when you need them, too. Simply wrap them up and pop them into your baking tray, cover with clingfilm and chill until you're ready to serve. Aside from serving them up beside a traditional dinner these chorizo pigs in blankets also make fantastic nibbles for parties. Serve them up with a rich tomato dipping sauce or a pot of sweet chill for guests to snack on while they sip away at their drinks - one thing's for sure however, napkins will be a must! The orange oil from chorizo can easily stain clothes thanks to their high paprika content (which also makes them delicious!) so these should be popped into the mouth whole and enjoyed in one glorious bite.
HOW TO MAKE CHORIZO PIGS IN BLANKETS
Ingredients
- 12 mini cooking chorizo
- 6 slices pancetta
Method
- Heat the oven to 190C, gas 5.
- Cut the pancetta slices in half and wrap them around the chorizo.
- Place on a baking sheet and bake for 20 minutes.
