Mix the herbs, garlic, chillies, sugar, lime juice and fish sauce in a bowl; season well. Stir in the crab and spring onions. Fan the lettuce leaves around the centre of each serving plate, add the cucumber and spoon the crab on to the centre. Serve with lime wedges.
Ingredients
- large handful coriander leaves, finely chopped
- small handful mint leaves, finely chopped
- 4 garlic cloves, crushed
- 3 green chillies, deseeded and finely chopped
- 1tbsp caster sugar
- juice 4 limes, plus lime wedges, to serve
- 4tsp Thai fish sauce
- 500g (1lb 2oz) white or mixed crabmeat
- 4 spring onions, finely sliced
- 3 Baby Gem lettuces
- ½ cucumber, halved and sliced
