Leftover chicken can easily be made into a chicken soup, curry or salad. They make for really speedy dinners, which is ideal for a Monday and Tuesday night, when we've had a busy day and are not looking to spend too long in the kitchen fixing up supper.
As always with storing and reheating leftovers, cool it as quickly as you can, then wrap it and pop it in the fridge, where it will keep for two days. Make sure it's piping hot right through before serving.
A fragrant Thai chicken salad with peanuts and ginger (pictured) is exactly what you want when you don't have too much time on your hands. It's perfectly crunchy and bursting with flavours, making it a real treat. Depending on how much heat you can handle, scale up or down the chilli. As the chicken is ready to go, this recipe takes no time at all to make, and it's really low in fat, which makes it diet-friendly too.

A chicken, avocado and walnut salad is really healthy too and makes for a lovely lunch. If you make it the night before and seal it up in a tupperware box, it's a great option after a big roast the night before.
