Leftover chicken recipes are a wonderful creative way to use up any meat you have left on your hands after a roast. Whilst we all love a chicken sandwich, it can get a bit tiresome, so why not try some of our interesting and tasty ways with leftover chicken to try this week.
Leftover chicken can easily be made into a curry, soup or salad and you can easily enjoy these recipes for a few days after you’ve had your roast. They make for really speedy dinners, which is ideal for a Monday and Tuesday night when we’ve had a busy day and not looking to spend too long in the kitchen fixing up supper.
Roast chicken soup
(pictured) is a really great choice for leftover chicken and though our recipe uses shop-bought stock, you can quite easily make your own if you’re feeling extra keen and find you have a little more time on your hands. Once you’ve stripped your chicken of the meat that you’re going to use in the soup, you can use the bones to create a really rich homemade stock to use as a base to the dish.
Our Thai chicken salad with peanuts and ginger is a more summery dish that’s a little lighter than a soup but just as delicious. Depending on how much heat you can handle, scale up or down the chilli. As the chicken is ready to go, this recipe takes no time at all to make, and it’s really low on fat, which makes it diet-friendly too.
A chicken, avocado and walnut salad is really healthy too and makes for a lovely lunch. If you make it the night before and seal it up in a tupperware box, it’s a great option after a big roast the night before.
