Assorted croustades


Quick and easy to make, these assorted croustades are great party food

Looking for quick, easy party food recipes? These croustades are gorgeous—the ultimate finger food. Check out the supermarkets for ready-made croustades – perfect for filling with many different savoury goodies. They make exquisite nibbles and are perfect for stylish entertaining.

How to fill the croustades
1 Mediterranean feta
Place half a semi-dried tomato in the croustade, add cubes of feta and top with half an olive and an oregano sprig.

2 Smoked salmon and sour cream
Place a spoonful of sour cream in the base and top with a small piece of smoked salmon. Garnish with chives and a tiny spoonful of salmon roe (Keta caviar).

3 Stilton and pancetta
Mix 100g (4oz) Stilton with 4tbsp sour cream and spoon a little into the base of each croustade. Top with grilled slices of pancetta and a couple of pieces of chives.

4 Thai chicken and coriander
Shred a couple of ready-roasted chicken breasts with a knife and blend with 1tbsp Thai green curry paste, 4tbsp mayonnaise, 3tbsp chopped fresh coriander and the juice of ½ a lime. Spoon into the croustade bases and top with a tiny spoonful of sweet chilli sauce and a coriander leaf.

5 Peking duck and plum sauce
Cook up your favourite Peking duck ready- meal and, once cool enough to handle, shred the meat. Spoon a little of the meat into each croustade, top with a spoonful of plum sauce and garnish with shredded spring onion and diced cucumber.
