Slightly spicy lamb burgers


Spices add zing to lamb burgers in this easy recipe

This easy recipe makes lamb burgers with a spicy difference. We cook them in the oven as lamb is quite fatty and would make the barbecue flame up.
Preparation time: 15 minutes Cooking time: 15 minutes Serves 4

400g (14oz) minced lamb
1 onion, finely chopped
1 garlic clove, crushed
1 egg, beaten
2tbsp tomato ketchup
1tsp smoked paprika (pimentón)

1 Preheat the oven to 200 C, 180 C fan, 400 F, gas 6. Mix together the lamb, onion, garlic, egg, ketchup and paprika. Season well. Take a teaspoon of the mixture and fry in a pan until browned. Taste for seasoning and add more salt and pepper or paprika if needed.
2 Shape into 8 burgers: take about 3tbsp of the mixture in wet hands and gently pat into a good round shape. Do not make them too thick, as lamb burgers tend to be stronger in taste than beef burgers.
3 Heat a non-stick frying pan (no need for oil, the meat is fatty enough) and fry the burgers for a few minutes on each side until browned, then put on a baking sheet in the oven for about 7 to 9 minutes. Serve with our new potatoes in home-made garlic and herb mayo with a tomato salad, or simply put into grilled ciabatta with a tad more ketchup.
