Tomato and red onion relish


This easy recipe makes a delicious relish that goes well with burgers and sausages

This easy recipe for tomato and red onion relish makes a great dip for burgers or sausages. Even better, it keeps for a week in the fridge.
Preparation time: 10 minutes Cooking time: 15 minutes Makes around 125g (4½oz)

4 large vine-ripened tomatoes, chopped
1 small red onion, chopped
1 garlic clove, crushed
2tbsp olive oil
1tbsp tomato purée
pinch of sugar

Place all the ingredients in a pan with salt and pepper. When it starts to bubble, simmer for about 15 minutes until the tomatoes have cooked down. Taste for seasoning – serve warm or cold as a dip with burgers or sausages.
Per batch: 245cals, 11g fat, 3.5g saturated fat, 16g carbohydrate
