Fruity fried rice recipe


The jasmine rice soaks up the curry sauce perfectly.

Preparation time: 15 minutes
Cooking time: 25 minutes
Serves 8

350g (12oz) jasmine rice
100ml (4fl oz) vegetable oil
2 garlic cloves, crushed
115g (4½oz) mangetout, halved lengthways and blanched for 2 minutes
5 tomatoes, peeled, deseeded and chopped
200g (7oz) fresh pineapple, peeled and chopped
3tbsp soy sauce
1 bunch fresh coriander, roughly chopped

1 Cook the rice according to instructions.
2 Heat oil in a pan, add garlic and cook for 1 minute. Add the rice, mangetout, tomatoes and pineapple. Cook over a high heat, stirring continuously. Add the soy sauce and coriander and heat through.

Per serving: 270cals, 10g fat, 2g saturated fat, 44g carbohydrate
