Spicy green beans recipe
Serves 8
450g (1lb) fine French beans, topped and tailed
1tbsp vegetable oil
1tbsp Thai red curry paste
3tbsp soy sauce
2tsp sugar
2tbsp fish sauce
3 kaffir lime leaves, rehydrated, then shredded
Blanch the beans in boiling water for 2 minutes and refresh under cold running water. Heat the oil in a saucepan and fry the curry paste for 2 minutes. Add the beans, 6tbsp water, soy sauce, sugar, fish sauce and lime leaves and cook until the beans are tender.
Per serving: 42cals, 2g fat, 0.5g saturated fat, 5g carbohydrate
