Using tamarind paste, which comes from a leguminous tree native to tropical Africa and has a sweet but tart taste that makes a really great marinade for meat. In this recipe we mixed tamarind paste with soy sauce.
Chicken thighs are also relatively inexpensive meat, so it’s a great one to try if you’re cooking for a crowd on a budget – as this recipe serves four. What’s more, it’s super quick to throw together as it’s just a case of marinating the meat and then cooking. You can marinate the meat overnight for extra flavour, or just ten minutes or so if you’re in a rush.
Serve up these tasty chicken skewers with fresh greens and rice and it makes a wholesome meal for the whole family that’s ready in a flash.
- 100g jar tamarind paste
- 2tbsp soy sauce
- 6 free-range skinless chicken thighs, cut into large chunks
Place all the ingredients into a bowl, toss to coat the chicken, cover, chill and marinate for ten minutes or overnight.
When ready to cook, heat the barbecue or grill to medium-high. Spear the chicken onto 4 metal skewers, season with pepper and grill for 10 to 15 minutes, turning once, until the meat is cooked through and slightly blackened. Great served with basmati rice or noodles and steamed greens.
