Green Beans with Mustard Vinaigrette

A Mediterranean dressing gives these green beans a lift

Preparation time: 10 minutes
Cooking time: 5 minutes
Serves: 8 on its own

800g (1lb 12oz) fine green beans, trimmed 3 garlic cloves 4tbsp lemon juice 1½tbsp Dijon mustard 1½tbsp wholegrain mustard 200ml (7fl oz) extra virgin olive oil

1 Blanch the beans in boiling salted water until bright green and just tender, then drain and run under cold water.

2 Peel the garlic and crush gently under the blade of a knife, then put into a jug with the rest of the ingredients and whisk well.

3 Add salt to taste and let it sit for a while to let the garlic infuse.
Put the beans into a bowl and toss well with the dressing, discarding the garlic, if you prefer.
