Serves 4 Easy1/2tsp vegetable oil, for greasing 4 cod fillets (each around 150g/5oz) 450g (1lb) potatoes, peeled, cooked and sliced 2tbsp soy sauce juice 1 lemon 1tsp olive oil For the salsa: 50g can anchovies in oil, drained and roughly chopped 2tbsp capers, chopped 3 tomatoes, deseeded and chopped handful parsley, chopped 2tbsp fresh dill, chopped 2 garlic cloves, crushed
1 Heat the oven to 180 C, 160 C fan, 350 F, gas 4. Grease a large casserole dish and add fish and potatoes. Combine the soy sauce, lemon and olive oil, then spoon over the fish. Bake for 15 minutes. 2 In the meantime, mix together the salsa ingredients. Serve over the fish and sautéed new potatoes.
