- 50g smoked paprika
- 50g sea salt
- 15g mild or hot chilli powder
- 25g coriander seed, crushed
- 50g freshly ground black pepper
- 50g soft brown sugar
Mix all the ingredients together to make a rub. Store in an airtight container and use within 2 months. This a great all-round barbecue rub that you can use on meat – it’s delicious on a joint of meat, ribs or on chicken. Make sure the meat is well coated before you start cooking the use our master barbecue sauce recipe as a baste. You can even use this master barbecue rub to spice up a side dish, by adding some to potato wedges before baking.
Make a big batch and store in an airtight container for up to 2 months
