Whip up quick and easy burgers for a summer get-together with these mini chorizo bites – they’re sure to be a big hit all round.
- 250g pack mini chorizo cooking sausages (we used Unearthed Mini Cooking Chorizo Sausages)
- 8 mini burger buns, sliced
- handful rocket leaves
- olive oil, to drizzle
Cook the chorizo over a medium heat in a frying pan (you won’t need any oil) for 15 minutes, turning frequently, until browned and cooked through. Slice thickly. To assemble, add 2 to 3 slices of chorizo to each bun, along with a few rocket leaves and a drizzle of olive oil.
If you want to make up a tapas board, you could add these extra dishes: jarred, roasted red peppers; and triangular slices of Manchego cheese – so easy!
