  • for the dressing
  • juice 2 limes
  • 3tbsp Thai fish sauce
  • 2tbsp palm (or soft brown) sugar
  • 1/2tsp dried chilli flakes
  • 2tbsp rice vinegar
  • For the salad
  • 2 beef fillet steaks
  • 2 carrots, peeled into ribbons
  • 4 spring onions, sliced
  • 1 red pepper, cut into strips
  • 1/2 cucumber, peeled, deseeded and cut into strips
  • 75g (3oz) runner beans, thinly sliced and blanched
  • for the topping
  • toasted peanuts and deep-fried red onions


  • Mix all the dressing ingredients together and stir well until the sugar has dissolved

  • Sear the steak for 2 minutes each side in a really hot non-stick pan. Set it aside to rest for 10 minutes, then slice thinly and spoon over half the dressing. Let it sit for around 15 minutes to marinate well.

  • Mix all the vegetables together with the remaining dressing, add the beef and top with the peanuts and onions.
