- 400g (14oz) frozen or fresh mixed summer berries
- 2tbsp framboise liqueur
- 1tbsp caster sugar
- 4 slices white bread
- 4tbsp icing sugar
- crème fraîche, to serve
Gently heat the berries, framboise and sugar in a saucepan for 10 minutes, stirring often. Sweeten if necessary; leave to cool.
Heat the grill to medium. Lightly grill the bread on one side then remove and sift the icing sugar on to the uncooked side and return to the grill for 2 minutes until the sugar has caramelised. Slice the toast on the diagonal, and serve topped with berry compote and crème fraîche.
If you're using fresh berries instead of frozen, you will need to add 2tbsp water when cooking the compote
