  • 1kg new potatoes, unpeeled and cut into small chunks
  • oil, for shallow frying
  • 3 red onions, peeled and sliced
  • 8 garlic cloves, sliced
  • 2 large red chillies, sliced
  • 5tbsp fresh coriander, chopped


  • Steam the potatoes until just cooked. Heat a few tablesoons of oil in a large frying pan and fry the onions, then the garlic, then the chillies, in batches, removing them with a slotted spoon on to kitchen paper. Add further oil – you want it to be about an inch deep, then fry the potatoes in batches until browned all over and crisp.

  • To serve, gently mix the potatoes with the onions, garlic and chillies, and season with sea salt and pepper, then stir in the coriander.
