Roasted Vegetable Salad with Feta Recipe

Ingredients

  • 3 peppers
  • 2 aubergines
  • 3 courgettes
  • 2 red onions
  • 1 bulb fennel
  • 6tbsp olive oil
  • 200g (7oz) feta cheese, cut into small chunks
  • 200g (7oz) grilled artichokes in oil
  • drizzle of balsamic glaze

Method

  • Chop the vegetables (except the artichokes) into chunks and toss in the oil in a roasting tin. Season. Roast at 200 C, 180 C fan, 400 F, gas 6 for 40 minutes until charred. Stir in the feta  and artichokes, place in a dish, drizzle over the glaze and serve.
