Puy lentil salad is a simple, nutrient packed and delicious salad recipe, perfect as a barbecue side dish or for a vegetarian packed lunch. All you need to do is mix the ingredients together and serve! You can prepare this salad in advance to save time if you are hosting a barbecue or buffet, or make a big batch and take some for your lunch every day.

Puy lentil salad packs a big nutritional punch. Lentils are an excellent vegetarian protein source, and are low in fat, so keep you feeling full for longer. They also help to lower cholesterol and to stabilise blood sugars. Walnuts provide heart healthy fats, and beetroot is full of antioxidants as well as being a source of iron and folates. We’ve used orange segments, watermelon, and pomegranate seeds which add beautiful colour, flavour, and provide more vitamins too – so not only is this a tasty recipe, it’s good for you too.

This super puy lentil salad can be served on its own, as a side dish, or mixed with some whole grains to provide an even more substantial meal.


HOW TO MAKE PUY LENTIL SALAD

Ingredients

  • 4 cooked beetroot, cut into wedges
  • 100g toasted walnuts
  • 2 large oranges, segmented
  • ΒΌ small watermelon, cut into cubes
  • 100g pomegranate seeds
  • 4tbsp pomegranate molasses
  • 250g pouch cooked puy lentils

Method

  • Simply mix all the salad ingredients, season, and serve.
