Fancy a pasta salad recipe this week that’s full of flavour, fills up the whole family and is super easy to put together? Try this oven-dried tomato and basil pasta salad for an easy dinner or lunch idea this week and you’ll not regret it.
With fresh tomatoes that are packed with vitamin C, olive oil, thyme and basil, this pasta salad has a distinct Mediterranean feel and taste.
You’ll need to roast the tomatoes and boil the pasta, but other than that there isn’t too much cooking involved in this dish, so it’s ideal if you want a tasty dinner but aren’t in the mood to slave away in the kitchen.
This recipe makes enough pasta salad to serve two people, but you can easily be doubled if you’ve got more mouths to feed.
- 5 large tomatoes, halved
- 2tsp olive oil, plus more to serve
- 1tsp caster sugar
- few sprigs thyme
- 200g (7oz) pasta
- large handful basil, leaves torn
Heat the oven to 130 C, 110 C fan, 250 F, gas ½. Place the tomatoes, cut side up, in a roasting tin and sprinkle over the oil, sugar and thyme sprigs. Season well. Roast in the oven for 90 minutes, until they’re wrinkled, deep red and fragrant.
When the tomatoes are almost ready, cook the pasta according to the pack instructions. Drain, coat in a generous glug of olive oil and leave to cool slightly. When the tomatoes are done, toss them gently through the pasta with the basil and some seasoning, and either serve immediately or leave in the fridge overnight and bring back to room temperature before serving.
