Miso salmon with cucumber salad is a new way with salmon that moves away from classic ingredients and explores new flavours. Miso is a savoury ingredient that has some sweetness to it and it just adds a little bit of edge to salmon which can sometimes get a bit boring if you're making it in the same way time and time again.

How to make Miso Salmon With Cucumber Salad


  • 8tbsp miso paste (we used white miso but brown is fine too)
  • 4 salmon fillets, skin on
  • 1 cucumber
  • 60ml toasted sesame oil
  • 30ml rice wine vinegar
  • 1tbsp toasted sesame seeds


  • Heat the grill to high. Spread 2tbsp miso over the top of each salmon fillet. Put onto a baking tray lined with oiled foil and grill for about 10 minutes or until the salmon is cooked to your liking and the top is nicely browned.

  • To prepare the salad, peel the cucumber into ribbons using a ribbon peeler, but don’t add the seeds as they make it too watery. Mix with the oil, vinegar and sesame seeds, and serve with the salmon.
