How to make Miso Salmon With Cucumber Salad
- 8tbsp miso paste (we used white miso but brown is fine too)
- 4 salmon fillets, skin on
- 1 cucumber
- 60ml toasted sesame oil
- 30ml rice wine vinegar
- 1tbsp toasted sesame seeds
Heat the grill to high. Spread 2tbsp miso over the top of each salmon fillet. Put onto a baking tray lined with oiled foil and grill for about 10 minutes or until the salmon is cooked to your liking and the top is nicely browned.
To prepare the salad, peel the cucumber into ribbons using a ribbon peeler, but don’t add the seeds as they make it too watery. Mix with the oil, vinegar and sesame seeds, and serve with the salmon.
