There’s nothing better than cooling down with a refreshing iced lolly on a hot summer’s day, right? Well we’ve made this summer treat even better…by adding gin. These cocktail lollies are bound to become a new summer favourite.
If you love trying out cocktail recipes when you’ve got friends and family over, why not surprise them with something different at your next barbecue or dinner in the garden? Instead of serving up traditional cocktails, offer round an ice bucket filled with these blueberry, elderflower and gin lollies instead? If you’re looking to keep things simple, these cocktail lollies are perfect for stress-free summer entertaining: dessert and drinks in one.
Making these violet-hued cocktail lollies couldn’t be easier. All you need to do is whizz fresh blueberries together with gin, sparkling water and elderflower cordial together in your blender. When you’ve got a smooth mixture, then pour them into lolly moulds and freeze overnight. Perfect for getting ahead before a summer bash. You could try other fruits, but blueberries are ideal because of their gorgeous colour and the fact that they’re seedless.
If you’ve got kids in the house, remember to label these lollies as they’re strictly for the grown-ups. Why not make younger guests their own lollies, without the booze – just remember to keep them separate and labelled.

  • 300g (10oz) blueberries
  • 65ml (2½fl oz) elderflower cordial
  • 250ml (9fl oz) sparkling water
  • 65ml (2½fl oz) gin (we like Hendrick's)


  • In a blender, whizz together the blueberries, elderflower cordial, sparkling water and gin (we like Hendrick’s). Pour into ice lolly moulds and freeze overnight.
  • To unmould, dip briefly in boiling water.
