For many of us, a BLT sandwich is a guilty pleasure. The crispy bacon, the crunchy lettuce, and that zingy sauce…it’s enough to make your mouth water just thinking about it! But if you are trying to stay healthy then that doesn’t mean you have to completely give up this tasty treat. Introducing: the BLT Salad, a healthy alternative to the classic sandwich.
Crispy bacon? Check. Cherry tomatoes? Check. Delicious salad? Check! This meal is a treat for the tastebuds, with its fantastic blend of bacon and nutritious fruit and veg, like avocado and spinach. Gone are the days of boring salads – bacon is the sizzling magic ingredient!
This meal is super easy and quick to put together, and it’s something that everyone can enjoy. You can serve it as lunch, as a light snack, or even as a starter at a dinner party. It’s a real crowd-pleaser so expect to hear a lot of compliments to the chef!
- ½ large ciabatta loaf, torn into medium-sized pieces
- 3tbsp olive oil
- 75g Parmesan, grated
- 200g smoked streaky bacon
- 2 ripe avocados, sliced
- 200g cherry tomatoes, halved
- 125g baby spinach
- For the dressing
- 60ml olive oil
- 30ml white wine vinegar
- 2tbsp wholegrain mustard
Heat the oven to 180C fan, gas 6. In a large bowl, toss together the ciabatta pieces, olive oil and Parmesan. Spread out on to a large baking tray lined with non-stick foil and bake in the oven for 10-15 minutes or until golden and crispy.
Lay the bacon out on a foil-lined baking tray and put under a moderate grill for 10 minutes or until crispy, turning halfway.
Arrange the avocados, tomatoes and spinach on a large serving plate. Top with pieces of the bacon and the croutons. Combine the dressing ingredients and drizzle over when ready to serve.
