For a fish dish that makes a real treat of a dinner but is actually really quick and easy to cook up, try this delicious baked salmon recipe this week. With tasty artichokes, French beans and cherry tomatoes, it makes a wonderful dinner party recipe option as it’s full of flavours and textures – and you’re guests never have to know how easy it actually is to make.

What’s more – did we mention how quick this dish is to make? Just 10 minutes to prep and another 25 minutes to bake in the oven; what could be easier? It’s all done in one pan too, so it saves on washing up.

Salmon is full of omega-3 fatty acids that are great for heart health and cell repair, while cherry tomatoes and French beans are both full of vitamin C and artichokes are a great source of antioxidants.

HOW TO MAKE BAKED SALMON STEAKS WITH FRENCH BEANS, CHERRY TOMATOES AND ARTICHOKES

Ingredients

  • 300g (10oz) French beans, blanched
  • 200g (7oz) cherry or small tomatoes on the vine
  • 1 small jar artichoke hearts, drained
  • juice 1 lemon
  • 3tbsp olive oil
  • 4 salmon steaks, each around 225g (8oz)
  • lemon wedges, to serve

Method

  • Preheat oven to 220 C, 200 C fan oven, 425 F, gas 7. Place the French beans, cherry tomatoes and artichokes in a roasting tin. Pour over the lemon juice and olive oil, toss well and season. Place the salmon steaks on top and season again. Put in the oven and bake for approximately 15 minutes – you will know when the salmon is cooked because the bone in the middle can be easily removed. Serve at once with lemon wedges.
