2 red onions, cut into wedges 2 red peppers, deseeded and chopped 300g (10oz) chorizo sausage, cut into thick slices 6 tomatoes, halved 1 garlic clove, unpeeled 6 chicken thighs 1tsp smoked paprika 1½tbsp olive oil a few sprigs of thyme
1 Heat the oven to 200 C, 180 C fan, 400 F, gas 6.
2 Place the onion wedges, peppers, chorizo, tomatoes and garlic in a large roasting tin and place the chicken on top.
3 Season well, sprinkle with paprika, then drizzle with oil, and scatter with the thyme.
4 Roast for 45 minutes or until the chicken juices run clear. Serve with herby rice.
