Preparation time 20 minutes
for the guacamole2 ripe avocados 1 tomato, deseeded and finely diced
½ red onion, finely diced 1 red chilli, deseeded and finely diced handful coriander, chopped juice 1 lime
for the crab
200g (7oz) white crab meat 100g (4oz) brown crab meat zest 1 lime juice ½ lime
you will need24 pastry spoons (from Sainsbury’s and Marks & Spencer)
1 Make the guacamole by mashing the avocados and mixing with the remaining ingredients. Season well and cover with clingfilm touching the surface until you’re ready to use.
2 Mix the white and brown crab meat with the lime zest and juice, and season well. Fill the pastry spoons with guacamole and top with crab.
Per spoon: 41 calories, 3.5g fat (0.7g saturated), 0.5g carbohydrate
