Champagne, and other sparkling wines like Prosecco and Cava, form a key part of many classic drinks. The original Champagne Cocktail, a mix of fizz, brandy, Angostura bitters, sugar and a maraschino cherry dates back to the 19th Century. 
If you like a pre-dinner cocktail but don’t want anything too heady before your meal, then Champagne cocktails are the perfect choice. They tend to be lighter and easier to sip than a cocktail made with spirits like rum or whisky. Classic aperitifs made with Champagne or Prosecco include the Bellini (made with Prosecco and peach puree), and the Aperol Spritz, made with Prosecco, Aperol and a slice of orange. These are the perfect drinks to linger over. 
Champagne cocktails are perfect for special occasions like Christmas and New Year’s Eve. Because the fizz is always mixed with other flavours, if you’re entertaining a crowd you can always use Prosecco or Cava instead of Champers and no-one will notice. One of the easiest Champagne cocktails to serve a crowd is the Kir Royale. This classic French cocktail is made with Champagne and Creme de Cassis, a blackcurrant liqueur.
