Ingredients
- 100g (4oz) unsalted butter, softened
- 1 large onion, halved and thinly sliced
- 1tsp sugar
- 60g (2½oz) Stilton, crumbled
- 1tbsp parsley or chives, finely chopped
- 1tsp lemon juice or cider vinegar

Preparation
Melt 25g (1oz) of the butter in a saucepan and cook the onion on a low heat for 15 minutes until completely soft and beginning to colour. Add the sugar, stir well and continue cooking until a rich brown in colour. Remove to a plate to cool.
Add the Stilton to the remaining soft butter and mash well. Add the herbs, lemon juice or vinegar and cooked onion, and season well.
Take a large square of clingfilm and place the butter in the centre to form a log. Roll the clingfilm tightly around the butter, then twist the ends of the clingfilm to form a neat roll. Chill for 30 minutes before using. The butter can be frozen for up to 1 month. Simply slice it into discs before you freeze it for handy ready-made portions.
