Ingredients
- 5tbsp olive oil
- 4 salmon fillets
- 200g (7oz) small capers, drained and rinsed
- 6tbsp breadcrumbs
- 75g (3oz) Parmesan, finely grated
Method
Heat the oven to 200C, 180C fan, 400F, gas 6. Add 1tbsp of the oil to a griddle or frying pan, and sear the salmon fillets on both sides until golden. Place them on a baking sheet lined with foil and cook in the oven for 5 to 10 minutes. This way of cooking fish prevents it from drying out.
Meanwhile, heat the remaining oil in a small frying pan, fry the capers and breadcrumbs until crispy then remove to a bowl. Add the Parmesan and some seasoning, mix and spoon over the salmon fillets. Serve with new potatoes and steamed mangetout or green beans.
COOK'S TIP This sharp topping also works really well with trout, sea bass or lamb chops.
