Ingredients

  • 5tbsp olive oil
  • 4 salmon fillets
  • 200g (7oz) small capers, drained and rinsed
  • 6tbsp breadcrumbs
  • 75g (3oz) Parmesan, finely grated

Method

  1. Heat the oven to 200C, 180C fan, 400F, gas 6. Add 1tbsp of the oil to a griddle or frying pan, and sear the salmon fillets on both sides until golden. Place them on a baking sheet lined with foil and cook in the oven for 5 to 10 minutes. This way of cooking fish prevents it from drying out.

  2. Meanwhile, heat the remaining oil in a small frying pan, fry the capers and breadcrumbs until crispy then remove to a bowl. Add the Parmesan and some seasoning, mix and spoon over the salmon fillets. Serve with new potatoes and steamed mangetout or green beans.
