Method
Place the walnuts, feta, pears, spring onion & pea shoots into a large bowl.
Mix the olive oil, lime juice, dijon mustard and honey together then lightly season with salt and pepper. Pour over the salad and toss gently to coat.
Divide between 6 plates and drizzle with any remaining dressing to serve.

- 75g(3oz) walnuts, roughly chopped
- 100g (4oz) feta, crumbled
- 2 ripe pears, sliced into small wedges
- 3 spring onions, finely sliced
- 75g(3oz) peashoots
- 4tbsp (60ml) olive oil
- ½lime, juiced
- 2tsp dijon mustard
- 2tbsp honey
