Ingredients
- 700g (1lb 9oz) broccoli
- 100g (4oz) blue cheese, thinly sliced
- 2tbsp toasted pine nuts
for the dressing
- 4tbsp olive oil
- juice 1 lemon
- 1 garlic clove, finely chopped
- 1tsp cayenne pepper
Method
Trim the broccoli and break into florets. Cook in boiling, salted water for 6 to 7 minutes until tender. Meanwhile, to make the dressing. whisk all the ingredients together in a bowl and season. Drain the broccoli and plunge it into the dressing, turning to coat. Set aside until cold, turning occasionally.
When the broccoli is cold, divide it among four serving plates with the blue cheese and pine nuts. Drizzle over any dressing left in the bowl and serve straight away.
