Low fat desserts (opens in new tab) can be hard to come by but when you discover one as good as this you won't look back. The combination of smooth, sweet yogurt and tangy fruit is a really refreshing one and because the method is so easy this really is an everyday solution to those sugar cravings without hitting the chocolate!
Because these lovely little pots are made without any refined sugar and use vitamin-rich berries they can also be served as a breakfast. They will look really pretty served up in glasses to impress guests!
HOW TO MAKE YOGURT BERRY PARFAITS
Taken from Deepak Chopra's latest health manual, What Are You Hungry For? (Rider, £12.99 (opens in new tab))
Ingredients
500 g (1 lb 2 oz) fresh berries or 275 g (10 oz) frozen berries
½ teaspoon ground cloves
½ teaspoon ground cinnamon
500 g (1 lb 2 oz) plain yogurt, preferably low-fat
1 teaspoon vanilla extract
2 tablespoons maple syrup or organic honey
Method
- In a small saucepan, warm the berries, adding a little water as needed to prevent burning. Simmer for 1 to 2 minutes.
- Add the cloves and cinnamon and continue to simmer until the berries begin to soften, cool slightly. If the berries produce too much liquid, spoon them into the bowl with a slotted spoon.
- Add the yoghurt and vanilla and mix well. Sweeten to taste with maple syrup. Serve with granola or porridge for breakfast or enjoy as a light dessert or snack.
