Apple and Fennel Coleslaw

  • 1 green apple, cored, cut into matchsticks
  • 1 fennel bulb, halved, very thinly sliced
  • 1 small white cabbage, very thinly sliced
  • juice of 1 lemon
  • 1tbsp white wine vinegar
  • 2tbsp finely chopped chives

For the dressing:

  • 4tsp strong horseradish
  • 200g natural yogurt
  • 100g mayonnaise
  • zest of 1 lemon
  • salt and pepper


  1. Mix the apple, fennel and cabbage with the lemon juice and vinegar and set aside for 5 minutes to soften slightly. Add the chives.
  2. For the dressing, mix all the ingredients together in a bowl then stir into the fruit mixture to make the slaw.
