Ingredients
- 1 green apple, cored, cut into matchsticks
- 1 fennel bulb, halved, very thinly sliced
- 1 small white cabbage, very thinly sliced
- juice of 1 lemon
- 1tbsp white wine vinegar
- 2tbsp finely chopped chives
For the dressing:
- 4tsp strong horseradish
- 200g natural yogurt
- 100g mayonnaise
- zest of 1 lemon
- salt and pepper
Method
- Mix the apple, fennel and cabbage with the lemon juice and vinegar and set aside for 5 minutes to soften slightly. Add the chives.
- For the dressing, mix all the ingredients together in a bowl then stir into the fruit mixture to make the slaw.
