Try a soya bean, spinach and pea soup for a twist on a classic, or an easy tikka butternut soup that's also gluten and dairy free! A roasted squash with ricotta and lemon is a smart starter that's ready in under an hour and James Martin's salt baked beetroot is something extra special.

There's nothing better than a one-potrecipe when you're expecting a crowd. They're easy to make and there's less washing up - bonus! You'd be surprised how many veggie options there are, from beetroot balls with Spanish-style sauce, to spicy lentil and sweet potato stew and bean and root veg pot.
