French toast is a great way to use up slightly stale bread. Serve with blueberry compote or a good glug of maple syrup
- 4 large eggs
- 700ml (1¼pt) milk
- 8 slices bread, thickly sliced and at least one day old
- butter, for frying
A little ground cinnamon, fresh nutmeg or vanilla added to the egg mixture is delicious if you are serving the French toast with fruit or maple syrup
You can top your French toast with anything you fancy. Try adding a little sugar to the egg mixture for a sweet version and finishing with a few berries and some thick Greek yogurt. For a savoury twist pile bacon on with a drizzle of maple syrup.
If you don't have French bread you can use whatever bread you have, just remember different variations will need diferent levels of soaking. Soft white bread will only need a quick dip while more dense loaves like a sourdough may need to be soaked for a good few minutes until the egg is saturated right through.
Beat the eggs and milk together until thoroughly blended and pour into a large dish that will comfortably hold a slice of bread.
Melt a small amount of butter in a large non-stick frying pan. Dip the bread one slice at a time into the egg mixture, and when it is well soaked but not soggy, add to the pan and fry for a couple of minutes on each side until golden brown. Remove to a plate, keep warm and continue with the remaining slices of bread.
