Spanish Tostadas

Deli buys

  • anchovy fillets
  • olives
  • roasted pepper strips
  • cured ham
  • sliced chorizo (optional) – you’ll need a good handful of each

You will also need

  • 1 loaf sourdough bread
  • 3-6 garlic cloves, halved
  • 3-4 tomatoes, halved across the equator
  • sea salt, for sprinkling
  • olive oil, for drizzling


  1. Just before you’re ready to sit down, slice and toast the bread (delicious on the barbecue or simply under the grill), then pop on a large breadboard with the garlic and tomatoes and put the toppings out in bowls. Show your friends how it’s done: rub the cut side of the garlic cloves roughly on to the toast, then rub and squeeze the tomatoes on to the toast, cut side down again – you’ll want a good covering of seeds. Sprinkle with sea salt and drizzle with olive oil, then pile the toasts with any of the accompaniments that you fancy.
