Prawn and avocado salad with lemon dressing recipe

Ingredients

  • 300g (10oz) watercress
  • 300g (10oz) large king prawns, cooked
  • 2 avocados, peeled and sliced
  • 150g (5oz) frozen petit pois, cooked
For the dressing
  • 2tsp grainy mustard
  • 1tsp clear honey
  • juice and zest half lemon
  • 4tbsp olive oil

Preparation

  1. Divide the watercress among eight plates, then top with the remaining ingredients. Whisk together the dressing ingredients and drizzle over the salad. Serve immediately.
