Marinated Mozzarella and Fig Salad Recipe
Preparation time: 10 minutes
Serves 4
75ml (3fl oz) crème fraîche
zest and juice ½ lemon
1 red chilli, deseeded and finely sliced
6tbsp torn fresh basil
3 packets fresh buffalo mozzarella, thickly sliced
4 ripe figs, halved
85g packet Parma ham
crusty bread, to serve
Combine the crème fraîche, lemon zest and juice, chilli and half the basil and season well. Arrange the mozzarella over one half of a large serving plate and pour over the flavoured crème fraîche. Chill for 1 hour. Before serving, scatter with the rest of the basil and arrange the figs and Parma ham around.
Serve with crusty bread.
