HOW TO MAKE MOZZARELLA SALAD WITH CHERRY TOMATOES

Ingredients

  • 500g cherry tomatoes, halved
  • 2 x 125g packs of buffalo mozzarella, roughly torn
  • a handful of fresh basil leaves, roughly torn

for the dressing

  • 1 garlic clove, crushed
  • 1tbsp balsamic vinegar
  • 1tsp caster sugar
  • 3tbsp extra virgin olive oil

Method

  1. Put the cherry tomatoes, mozzarella and basil leaves in a large bowl and stir well to combine.
  2. In a separate bowl, mix the dressing ingredients together and pour over the salad. Season well with salt and freshly ground black pepper and toss to combine. Serve immediately.
