This simple chickpea salad bowl is so easy to prepare and makes a delicious and healthy side dish or lunch. As there are only a few simple ingredients, buying good quality Spanish chickpeas makes all the difference in this recipe. This chickpea salad bowl can be prepared in advance, then mixed with some rocket leaves before serving.
Chickpeas are an excellent source of fibre and protein, and are low in fat, helping to keep you feeling full and satisfied for longer. This salad is a great healthy option for vegetarians and is so tasty that even meat eaters will love it. Black olives add a natural saltiness to the salad, and fresh parsley adds an aromatic and punchy flavour.

- 660g jar Spanish chickpeas
- 250g halved cherry tomatoes
- 150g radishes, halved
- 130g pitted black olives
- 4tbsp chopped flat leaf parsley
- 3tbsp olive oil
- juice of 1 lemon
- a handful of rocket leaves, to serve
