Ingredients

  • 300g (10oz) basmati rice, rinsed in water
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1/2tsp each ground turmeric and salt
  • zest and juice 1 lemon

Method

  • Put the washed rice into a saucepan with all the ingredients plus 600ml (1pt) water. Bring to the boil, cover with a tight-fitting lid and simmer for 10 to 15 minutes. Turn off the heat, remove the lid, cover with a clean tea towel and stand for a few minutes before serving.
