This fennel, feta and orange salad is a lovely dish with the sweetness and acidity of the oranges, combined with the salty feta and aromatic fennel. The best thing about this salad is that it can be made ahead, as it won't wilt. Just make sure to add the dill right before serving. Keep it in the fridge and make sure it's nice and chilled before you dish it up. You can either serve it up as a starter, or as an accompaniment to your main. It goes really well with meat, especially something like duck, as the sharpness of the oranges cuts through the rich meat.
When hosting a dinner party, you might overlook salads as a nice option or addition to your meal. This can be a good opportunity to show off your ability to combine wonderful textures and flavours to friends and family. This fennel and orange salad is a good example of just that - the flavours are incredibly sophisticated, and yet the salad takes a mere 20 minutes to throw together. The part that might take the most time to prep is segmenting the orange. In order to do this, you should ensure you have a really sharp knife so it's easier. Don't worry if you've got a lot of juice coming out of your oranges as you do this, just make sure to collect this and use it to make the dressing. Nothing goes to waste here - it's just a fantastically simple recipe that has a lot of stand-out flavours, colours and textures!
