  1. Trim the ends of the cucumber, halve lengthways. Scoop out the seeds with a teaspoon and cut into 1cm (1/2 in) chunks. Place in a serving bowl with the onion, chilli olives and mint. Pour over the olive oil and lemon juice mix well then crumble over the feta cheese. Serve chilled.


  • 1 large or 2 small cucumbers
  • 1 small red onion, halved and thinly sliced
  • 1 red chilli, deseeded and finely sliced
  • 12 black olives, halved
  • 1 tbsp mint, roughly chopped
  • 60ml olive oil
  • Juice of ½ lemon
  • 150g (5oz) feta cheese
