Method
Trim the ends of the cucumber, halve lengthways. Scoop out the seeds with a teaspoon and cut into 1cm (1/2 in) chunks. Place in a serving bowl with the onion, chilli olives and mint. Pour over the olive oil and lemon juice mix well then crumble over the feta cheese. Serve chilled.
Ingredients
- 1 large or 2 small cucumbers
- 1 small red onion, halved and thinly sliced
- 1 red chilli, deseeded and finely sliced
- 12 black olives, halved
- 1 tbsp mint, roughly chopped
- 60ml olive oil
- Juice of ½ lemon
- 150g (5oz) feta cheese

You can score the outside of the cucumber by running a fork down the length or peel it if you prefer.
