Bake delicious cakes without the calories - Lorraine Pascale will show you how in her new book...
She's usually the one whipping up something delicious, but tonight Lorraine Pascale will swap her apron for a judge's clipboard as she takes on her latest challenge on Sky Living's brand new cooking competition, My Kitchen Rules.
With the help of fellow chef Jason Atherton, Lorraine will be casting a critical eye over a host of amateur cooks' culinary efforts. Already a big hit in Australia, the show will pit couples from England, Ireland, Scotland and Wales against eachother in a series of cook-offs to see who can create the most mouth-watering menu, before battling it out in the My Kitchen Rules studio.
While we're all feeling the New Year pinch this month, we couldn't think of a better opportunity to indulge in a spot of lighter baking. So to celebrate Lorraine's small screen debut, we've rounded up some of her most delectable recipes from the best-selling 'A Lighter Way To Bake' (opens in new tab). Enjoy!
Don't forget to tune in to My Kitchen Rules, tonight at 9pm, Sky Living
Lorraine Pascale's Almond, Blackberry and Peach Friands recipe
'So I made these on freezing afternoon trying to recreate a feeling of summer in the UK rain', Lorraine says. 'These are not friands in the traditional sense as they require lorry loads of butter; instead this is my slightly more guilt-free friand.' Make Lorraine Pascale's Almond, Blackberry and Peach Friands (opens in new tab)
Lorraine Pascale's Victoria Meringue Sponge with Mango, Lime and a Vanilla Cream Filling recipe
''With that amount of sugar, how did you manage to squeeze this bad boy into a book called A Lighter Way To Bake?', you ask? Sadly, a meringue does not work so well scientifically without a certain amount of sugar. So, justification, I really hope you enjoy this messy, magical meringue and see it as a little treat now and again when your sweet tooth is crying for appeasement!' Lorraine Pascale's Raspberry Rhubarb Galette with a Vanilla and Hazelnut Ice-Cream recipe
'If you can't find ground cardamom, take two cardamom pods, bash them to open them, discard the shells and grind up the seeds inside until fine'. Make Lorraine Pascale's Raspberry Rhubarb Galette (opens in new tab)
