Charred Salmon Fillets with Mango Salsa

So quick and delicious, this salsa recipe works well with any fish, and you can up, or down, the chilli to taste

Ingredients

  • 4 salmon fillets
for the salsa
  • 300g (10oz) fresh mango, finely diced
  • 1-2 red chillies, deseeded and finely chopped
  • red onion, diced
  • juice 1-2 limes (depending on how sweet the mango is)

Preparation

  1. Get the barbecue going so it's fairly hot (or heat the grill to medium-high), season and lightly oil the salmon fillets, then grill for 5 minutes, turning once, for medium-rare salmon, or longer if you prefer.

  2. Mix the salsa ingredients, and season. Serve the salmon with the salsa on the side.
