Ingredients
- 4 salmon fillets
for the salsa
- 300g (10oz) fresh mango, finely diced
- 1-2 red chillies, deseeded and finely chopped
- ½ red onion, diced
- juice 1-2 limes (depending on how sweet the mango is)
Method
Get the barbecue going so it's fairly hot (or heat the grill to medium-high), season and lightly oil the salmon fillets, then grill for 5 minutes, turning once, for medium-rare salmon, or longer if you prefer.
Mix the salsa ingredients, and season. Serve the salmon with the salsa on the side.
