Charred salmon fillets with mango salsa recipe

So quick and delicious, this salsa recipe will work well with any fish, and you can up or down the chilli content to taste

  • 4 salmon fillets
for the salsa
  • 300g (10oz) fresh mango, finely diced
  • 1-2 red chillies, deseeded and finely chopped
  • ½ red onion, diced
  • juice 1-2 limes (depending on how sweet the mango is)


  1. Get the barbecue going so it's fairly hot (or heat the grill to medium-high), season and lightly oil the salmon fillets, then grill for 5 minutes, turning once, for medium-rare salmon, or longer if you prefer.

  2. Mix the salsa ingredients, and season. Serve the salmon with the salsa on the side.
