Easy/prepare ahead
Preparation time: 15 minutes, plus chilling Cooking time: 30 minutes Serves 4
4 skinless chicken breasts 75g (3oz) mozzarella 100g (4oz) fresh breadcrumbs grated zest 1 lemon handful parsley, finely chopped 1 egg, beaten 1tbsp sunflower oil
1 Heat the oven to 200 C, 180 C fan, 400 F, gas 6. Cut a pocket in each chicken breast and stuff with a slice of mozzarella. Mix the breadcrumbs with the lemon and parsley, and season well.
2 Coat the chicken in egg and then in the breadcrumbs. Chill for 30 minutes.
3 Heat the oil in a pan and fry the chicken for 2 to 3 minutes on each side until just golden, then place the chicken on a baking sheet and cook in the oven for 20 to 25 minutes until tender. Serve with rice, salad and tomato relish.
