Serves 4 Easy/Prepare ahead1 garlic clove, crushed 1 small red onion, chopped 1/2 small red or green pepper, deseeded and finely chopped 250g (9oz) lean lamb mince 1tsp cinnamon 1tsp cumin

1 Heat a large non-stick frying pan and add the garlic, onion and pepper. Gently soften for 5 minutes. 2 Put the mince and spices in a bowl and stir in the onion misture. With your hands, shape into burgers, using round pastry cutter as a guide, if necessary. Put on a baking sheet and chill for 10 minutes. 3 Over a medium heat, cook the burgers in the frying pan for 4 to 5 minutes on each side, until cooked through. Serve in a bun with salad leaves and some relish.
